Baked Eggs Skillet with Avocado and Spicy Tomatoes

This Baked Eggs Skillet with Avocado and Spicy Tomatoes is a tasty and filling meal that is also gluten-free, low-carb, and paleo. When you mix creamy avocado, spicy tomatoes, and perfectly cooked eggs, you get a hearty breakfast or brunch option.

Ingredients:

  • 4 eggs
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

Preheat the oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add minced garlic and cherry tomatoes to the skillet, and cook until tomatoes start to soften, about 3-4 minutes

Season tomatoes with paprika, chili powder, salt, and pepper

Create small wells in the tomato mixture and crack eggs into each well

Arrange avocado slices around the eggs

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the egg whites are set but yolks are still runny

Garnish with fresh cilantro and serve hot
