Blueberry Waffle Cookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- 1/4 cup crushed waffle cone pieces
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together the flour, baking powder, and salt
In a separate bowl, cream the softened butter and sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated
Gently fold in the fresh blueberries and crushed waffle cone pieces
Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them a few inches apart
Bake in the preheated oven for about 10-12 minutes, or until the edges are golden
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
