Hot Chocolate Cookies with Marshmallow Glaze
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup heavy cream
- 1 cup confectioners sugar
- 1/2 teaspoon vanilla extract
Instructions:
Preheat the oven to 350F 175C
Line baking sheets with parchment paper
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy
Beat in the eggs one at a time, then stir in the vanilla extract
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients and mix until just combined
Fold in the semisweet chocolate chips
Drop tablespoon-sized dough onto the prepared baking sheets, leaving some space between each cookie
Bake for 10-12 minutes or until the edges are set
Remove the cookies from the oven and immediately press a few mini marshmallows into the center of each cookie
Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer
Remove the saucepan from the heat and stir in the confectioners sugar and vanilla extract until smooth and well combined
Allow the glaze to cool for a few minutes before drizzling it over the cooled cookies
Sprinkle some additional mini marshmallows on top of the glaze for garnish, if desired
Let the glaze set before serving the cookies
