Leek and Gruyere Grilled Cheese
Ingredients:
- 2 slices of bread
- 2 tablespoons butter
- 1 cup shredded Gruyere cheese
- 1/2 cup sliced leeks white and light green parts
- Salt and pepper to taste
Instructions:
Put the pan or griddle on medium-low heat
Melt 1 tablespoon of butter over medium-low heat in a different pan
Slice the leeks and add them to the pan
Saut for about 5 minutes, or until they are soft and slightly caramelized
Add pepper and salt to taste
On one side of one slice of bread, spread the last tablespoon of butter
Put the bread slice on the hot skillet or griddle with the buttered side facing down
Put the shredded Gruyere cheese on top of the bread slice quickly in the pan
Spread the sauted leeks out over the cheese
Butter side up, put the second slice of bread on top of the leeks
It will take about 34 minutes of cooking until the bottom piece of bread is golden brown and the cheese starts to melt
The other side of the sandwich should be cooked until its golden brown and the cheese is melted, which should take another 3 to 4 minutes
Take the grilled cheese with leeks and Gruyere off the pan or griddle and let it cool for a minute
Cut the sandwich in half across the middle and serve it hot
