Lamb, Pumpkin, and Haloumi Gozleme
Ingredients:
- 200g lamb mince
- 1/2 cup diced pumpkin
- 100g haloumi cheese, grated
- 2 sheets of store-bought Turkish flatbread
- 1/2 red onion, finely chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- Greek yogurt or tzatziki for serving
Instructions:
Heat 1 tablespoon of olive oil in a pan over medium heat
Add the finely chopped red onion and cook until softened
Add the lamb mince and cook, breaking it apart with a spoon, until browned and cooked through
Add the ground cumin, ground coriander, paprika, salt, and pepper to the lamb mixture
Stir well to combine and cook for another 2-3 minutes
Remove from heat
Place one sheet of Turkish flatbread on a clean surface
Spread half of the cooked lamb mixture evenly over one half of the flatbread
Sprinkle half of the grated haloumi cheese over the lamb mixture
Add half of the diced pumpkin, fresh mint leaves, and fresh parsley leaves on top of the cheese
Fold the other half of the flatbread over the filling to create a half-moon shape
Press the edges firmly to seal the gozleme
Repeat the process with the remaining sheet of flatbread and the remaining filling ingredients
Heat the remaining olive oil in a large non-stick skillet over medium heat
Carefully transfer one gozleme to the skillet and cook for 2-3 minutes on each side, or until golden and crisp
Repeat with the second gozleme
Remove from heat and let cool slightly before slicing each gozleme into wedges
Serve hot with Greek yogurt or tzatziki on the side
