BBQ Potato Salad
This BBQ Potato Salad is a great side dish for parties during the summer. The soft potatoes, tangy mayo-Dijon dressing, and mix of crunchy vegetables make it creamy and flavorful. Its a hit with everyone and will make any barbecue better.
Ingredients:
- 4 cups diced potatoes
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup diced dill pickles
- 2 hard-boiled eggs, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions:
It will take about 10 to 12 minutes of boiling the diced potatoes until they are soft enough to pierce with a fork
As the potatoes boil, mix the Dijon mustard and mayonnaise in a large bowl
Once the potatoes are done, take them out of the water and let them cool down
To the mayonnaise and Dijon mix, add the diced potatoes
Dice the red onion, celery, dill pickles, eggs, and fresh parsley
Add them to the bowl
Paprika, garlic powder, onion powder, and salt should all be used to season the food
Toss the ingredients together gently until they are well mixed
Put it in the fridge for at least an hour before serving so the flavors can mix
