Sweet and Spicy Tofu Noodles

A tasty and filling dish, these sweet and spicy tofu noodles are ideal for a quick weeknight supper. Savory soy sauce, sweet maple syrup, and hot sriracha combine to make a delicious sauce that perfectly coats the tofu and noodles. This dish, with its crunchy vegetables and nutty peanuts for texture, is sure to become a family favorite.

Ingredients:

  • 1 block extra-firm tofu, pressed and cubed
  • 8 oz dried noodles such as rice noodles or soba noodles
  • 1/4 cup soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp sriracha sauce
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 green onions, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup peanuts, chopped
  • 1 tbsp sesame seeds, for garnish

Instructions:

Cook the noodles according to package instructions

Drain and set aside

In a small bowl, whisk together soy sauce, maple syrup, sriracha sauce, and minced garlic

In a large skillet, heat sesame oil over medium-high heat

Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes

Add sliced green onions, red bell pepper, and julienned carrot to the skillet

Cook for an additional 2-3 minutes until vegetables are tender-crisp

Pour the sauce over the tofu and vegetables in the skillet

Add cooked noodles to the skillet and toss everything together until well coated in the sauce

Serve the sweet and spicy tofu noodles hot, garnished with chopped peanuts and sesame seeds
