Chili Rubbed Pork Tenderloin with Apricot Ginger Glaze
Ingredients:
- 2 Pork tenderloins
- 2 tablespoons Chili powder
- 1 tablespoon Ground cumin
- 1 tablespoon Paprika
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 1 tablespoon Brown sugar
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Apricot preserves
- 2 tablespoons Soy sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon Minced ginger
- 1 teaspoon Minced garlic
- 1/4 teaspoon Red pepper flakes optional
Instructions:
Preheat the oven to 375F 190C
In a small bowl, combine chili powder, ground cumin, paprika, garlic powder, onion powder, brown sugar, salt, and black pepper to make the rub
Rub the spice mixture evenly over the pork tenderloins
Place the tenderloins on a baking sheet lined with parchment paper or aluminum foil
Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 145F 63C
While the pork is cooking, prepare the apricot ginger glaze
In a small saucepan, combine apricot preserves, soy sauce, rice vinegar, minced ginger, minced garlic, and red pepper flakes if using
Cook over medium heat, stirring frequently, until the mixture is heated through and slightly thickened, about 5-7 minutes
Once the pork is done, remove it from the oven and let it rest for 5 minutes before slicing
Serve the sliced pork tenderloin with the apricot ginger glaze drizzled over the top
