Grilled Snapper Sandwich with Pickled Vegetables

With its tender grilled snapper fillets, tangy pickled vegetables, and creamy mayo-Dijon spread, this grilled snapper sandwich is full of taste and texture. This dish is the perfect mix of healthy and tasty, making it a great choice for lunch or dinner.

Ingredients:

  • 4 snapper fillets
  • 4 sandwich rolls
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup sliced cucumbers
  • 1/4 cup sliced red onions
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 4 lettuce leaves
  • 4 tomato slices
  • 2 tablespoons olive oil

Instructions:

In a small bowl, mix rice vinegar, sugar, salt, and black pepper

Add shredded cabbage, carrots, cucumbers, and red onions

Toss to combine

Let it sit for at least 30 minutes

Preheat grill to medium-high heat

Brush snapper fillets with olive oil and season with salt and pepper

Grill snapper fillets for 3-4 minutes per side, or until cooked through

Spread mayonnaise and Dijon mustard on the sandwich rolls

Layer lettuce leaves, tomato slices, grilled snapper fillets, and pickled vegetables on the sandwich rolls

Serve immediately and enjoy
