Vegan Carrot Cake Baked Oatmeal

Enjoy this vegan carrot cake baked oatmeal, which is full of healthy foods like carrot, cinnamon, nutmeg, and the satisfying crunch of walnuts. Its the perfect treat for breakfast because its healthy and tastes great

Ingredients:

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 1/2 cups almond milk
  • 1/4 cup maple syrup
  • 2 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 1 cup grated carrot
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts

Instructions:

Preheat oven to 375F 190C

Grease a baking dish

In a large bowl, mix together oats, baking powder, cinnamon, nutmeg, and salt

In another bowl, whisk together almond milk, maple syrup, flaxseed, and vanilla extract

Add wet ingredients to dry ingredients and stir until well combined

Fold in grated carrot, raisins, and chopped walnuts

Pour mixture into the prepared baking dish and spread evenly

Bake for 35-40 minutes, or until golden brown and set

Remove from oven and let it cool slightly before serving
