Beer-Cheese Velvet Soup

Ingredients:

  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 12 ounces beer preferably a lager or ale
  • 4 cups low-sodium chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh chives for garnish

Instructions:

In a slow cooker, combine onion, carrots, celery, and garlic

Sprinkle flour over the vegetables and stir to coat

Pour in the beer and chicken broth, stirring to combine

Cover and cook on low for 6-8 hours, or high for 3-4 hours, until vegetables are tender

Stir in shredded cheese and heavy cream until cheese is melted and soup is creamy

Season with salt and pepper to taste

Serve hot, garnished with chopped fresh chives
