Blackberry-Banana Ice Cream is a delicious and refreshing summer treat that combines the sweet and sour tastes of blackberries and ripe bananas. This recipe doesnt use dairy and is fruity and creamy. Its great for cooling off on a hot day.
Ingredients:
- 2 ripe bananas, sliced and frozen
- 1 cup blackberries, frozen
- 1/4 cup coconut milk
- 1 tablespoon honey or maple syrup
Instructions:
In a blender or food processor, combine frozen bananas, blackberries, coconut milk, and honey/maple syrup
Blend until smooth and creamy, scraping down the sides as needed
Transfer the mixture to a freezer-safe container
Cover and freeze for at least 4 hours or until firm
Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly
Scoop into bowls or cones and enjoy
