Curry Cauliflower Rice with Quinoa

This curry cauliflower rice with quinoa is a quick and easy vegan dish that tastes great and is good for you. Spices, coconut milk, and vegetables all come together to make a delicious meal thats great for any event.

Ingredients:

  • 1 medium cauliflower, grated
  • 1 cup quinoa, rinsed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 1 can 400g coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions:

Warm up the olive oil in a big pan over medium-low heat

Add the chopped onion and garlic and cook until the onion is clear

Add the cumin, turmeric, and curry powder and stir them in

Cook for one more minute

Chopped cauliflower, quinoa, bell pepper, and frozen peas should all be added

Stir every now and then for 5 minutes

Then add the coconut milk and bring it to a simmer

Cover and cook for 15 to 20 minutes, or until the quinoa is soft and the milk is absorbed

Add pepper and salt to taste

Add fresh cilantro as a garnish before serving
