Fresh Soba Noodle Bowl with Garlic Shrimp and Miso Dressing
The fresh soba noodles, garlic shrimp, and miso dressing in this bowl are a great mix of tastes and textures. Ingredients:
- 200g soba noodles
- 300g shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 tablespoons olive oil
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 avocado, sliced
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Green onions for garnish
Instructions:
Follow the directions on the package to cook the soba noodles
Afterward, rinse them under cold water and set them aside
Pour miso paste, soy sauce, rice vinegar, and sesame oil into a bowl
Mix them together to make the dressing
Set a pan on medium heat and add the olive oil
Mix in the garlic and cook until it smells good
Before you add the shrimp, make sure its pink and fully cooked
This should take about two to three minutes per side
Add pepper and salt
Put cooked soba noodles in serving bowls and top with cooked garlic shrimp, cucumber slices, carrot strips, and avocado slices
Pour the miso dressing over the bowls of noodles
For decoration, add sesame seeds and chopped green onions
Serve right away and enjoy
