Swig Sugar Cookies
Ingredients:
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 3 to 4 tablespoons buttermilk
- gel food coloring optional
- 1/4 cup granulated sugar for rolling
Instructions:
Preheat oven to 350F 175C
Line baking sheets with parchment paper
In a medium bowl, whisk together flour, baking soda, and baking powder
In a large mixing bowl, cream together softened butter and sugar until light and fluffy
Beat in the egg, vanilla extract, and almond extract until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
If desired, separate the dough into portions and add gel food coloring to each portion
Add 1 tablespoon of buttermilk at a time to the dough, mixing well after each addition, until the dough reaches a soft and slightly sticky consistency
Cover the dough and refrigerate for at least 30 minutes
Shape the dough into 1 1/2-inch balls and roll them in granulated sugar
Place the sugar-coated dough balls on the prepared baking sheets, leaving enough space between each cookie
Using a flat-bottomed glass or measuring cup, gently press down on each dough ball to flatten slightly
Bake the cookies in the preheated oven for 8 to 10 minutes, or until the edges are just starting to turn golden
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely
