Air Fryer Sweet and Sour Chicken
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/4 cup cornstarch
- 1/4 cup gluten-free soy sauce
- 1/4 cup apple cider vinegar
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 bell pepper, diced
- 1 onion, diced
- 1 tablespoon vegetable oil
Instructions:
Get the air fryer ready by heating it up to 400F 200C
Toss the chicken pieces in cornstarch in a bowl until they are well covered
Put the chicken in the air fryer basket and coat it with the sauce
Cook for 10 to 12 minutes, shaking the basket every so often, until the chicken is golden and fully cooked
In the meantime, mix the ketchup, soy sauce, apple cider vinegar, brown sugar, garlic, and ginger in a small saucepan
Bring to a simmer over medium-low heat and stir the sauce every now and then until it gets a little thicker
Set aside a different pan and heat vegetable oil over medium-low heat
Dice the onion and bell pepper and saut them until they are soft
Put the cooked chicken and the sweet and sour sauce that you made into the pan with the vegetables
With a spoon, spread the sauce out over the chicken and vegetables
Warm it up and put it on top of rice or quinoa
