Vegan Boston Cream Pie Cookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup coconut oil melted
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup vegan custard or vanilla pudding
- 1/4 cup dairy-free chocolate chips
Instructions:
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
Put the flour, sugar, baking powder, and salt in a bowl and mix them together
Melt the coconut oil and mix it with the almond milk and vanilla extract
Mix until you get a dough
Take dough balls about the size of a tablespoon and roll them into balls
Put them on the baking sheet that has been prepared and use your palm to make them a little flatter
Put the cookies in an oven that has already been heated for 10 to 12 minutes, or until the edges are just barely golden
After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way
Spread a little vegan custard or vanilla pudding on the flat side of half of the cookies once they are completely cool
To make sandwich cookies, put the rest of the cookies on top of the custard-covered cookies
In a bowl that can go in the microwave, melt the dairy-free chocolate chips for 20 seconds at a time, stirring after each time
Do this until the chocolate is smooth and melted
You can either dip half of each sandwich cookie into the melted chocolate or drizzle the chocolate over the cookies
Set the chocolate-covered cookies on a baking sheet lined with parchment paper
Put the tray in the fridge for 15 to 20 minutes, or until the chocolate is set
